Do you and your friends feel like outlaws donning masks to run errands around town? You’d fit right in here.

While many counties in the state of Washington enter phase 2 of the Safe Start COVID order, Okanogan County is still in Phase 1. The county is asking those with the itch to travel to stay close to home.

Our state and national parks are open for day use, but not for overnight camping. The visitor information centers will remain closed until phase 3 of the state reopening.

For those who find themselves in our community, we are grateful for so many who are helping protect our vulnerable population by following medical advice. We are a mask wearing community- we welcome outlaws.

A Taste of Winthrop

Historic town preserved to the Wild West 1850’s on the brink of the national forest.

The cute little Western town of Winthrop WA is a fantastic vacation destination that you’ll definitely want to check off your bucket list! Winthrop is on the edge of the national forest and state land; a recipe for fabulous outdoor adventure . Unfortunately, we can’t visit the town right night, but we can certainly get a taste of some of the delicious meals we would eat if we could visit.

Sun Mountain Lodge‘s Chicken Curry Soup Recipe:

Sun Mountain Lodge is nestled on a hilltop with breathtaking views of the Cascade Mountains. The lodge offers horseback riding, sleigh rides, access to year round trails, pools, wine tasting, and so much more.

I don’t know if you’ve ever had this soup, but if you haven’t, you’ve been missing out. A Winthrop local positively *begged* for this recipe years ago and the restaurant (rightfully) declined. In light of this pandemic, Sun Mountain Lodge is offering you this amazing opportunity to try the soup as a *teaser* of what else you could enjoy in Winthrop, WA once the hotels are able to open again.

Sun Mountain Lodge as well as their kitchen is currently closed, but is looking forward to reopening as soon as safely possible.

Makes 8 servings
In large saucepan:
4 cups chicken stock
1 bay leaf
1/2 cup cream of coconut
1/2 cup coconut milk
2/3 cup pineapple juice
Bring to boil.
Thicken with roux: 1/4 cup butter, 7 tablespoons flour
While boiling, add: 1/4 cup cornstarch
mixed with 1 tablespoon water

Clean and dice:
2 cups chicken (1.66 lbs.)
1/2 cup diced onion
1/2 cup diced celery ribs

Pre-heat thick stockpot. Add:
1/4 cup olive oil
1/4 teaspoon coarse black pepper
2 cups chicken — cook until 3/4 done
1/2 cup diced onion — cook until transparent
Mix together and add:
1/2 teaspoon fresh garlic
1/2 teaspoon fresh ginger
1 teaspoon cumin
3 teaspoons curry powder
1 teaspoon sambol
1/8 teaspoon fine black pepper
Sautée lightly — finish with 1/2 cup heavy cream.
Add: 1/2 cup diced celery ribs
Add: thickened stock to chicken and spices
Finish with:
1/2 cup cooked wild rice
Season to taste with salt and pepper. Top with toasted

coconut, toasted almonds, lime zest and pineapple-
black current chutney (recipe to follow).
PINEAPPLE-BLACK CURRANT CHUTNEY
In small saucepan:
Zest from 1 lemon
1 teaspoon fresh ginger
1/2 cup sugar
1/2 cup water
Reduce by half to a thick syrup. Set aside.

In saucepan, brown:
1/2 cup sugar
Add: 1/2 cup fine diced onion. Cook until transparent.
Then add: 2 cups fine diced pineapple. Cook lightly.
Add: 2 cups pineapple juice, 1 teaspoon nutmeg, 1 teaspoon cinnamon, 1/2 teaspoon cloves
Thicken with 1 1/2 tablespoons cornstarch added to 1 cup water

Finish with:
Add lemon zest syrup
1/3 cup rice wine vinegar
1 cup black currants
1 teaspoon fresh ginger

ENJOY

Old Schoolhouse Brewery‘s Chocolate Stout Cake Recipe:

Old Schoolhouse Brewery started in 2008 along the downtown boardwalk of Winthrop, WA. The tiny storefront (which resembles an old schoolhouse) expands to the back of the building to a large riverfront patio where diners can relax and unwind, and often enjoy live music. The award winning beer in cans and bottles is available across the state. Check the website for availability.

This recipe has never been shared before, so get ready for something delicious! This simple recipe with relatively few ingredients can work with any stout recipe including OSB’s award winning Hooligan Stout, Melipona Stout (an artisan vanilla stout), or even Imperial Stout.

Old Schoolhouse Brewery is currently open several days a week and offering take out, including some terrific deals on delicious to-go beer in bottles, crowlers, and cans.

Chocolate	11 oz	n/a	n/a
Butter	1 lbs	n/a	n/a
Stout Beer	3/4 cups	n/a	n/a
Sugar	1 1/2 cups	n/a	n/a
Whole eggs	6 ea	n/a	n/a
Procedure			
Preheat conventional oven to 350ᵒ			
In a double boiler, melt chocolate and butter stirring occasionally. Remove from heat 			
In a separate bowl, whisk together beer, sugar,and eggs. Let warm to room temp.			
Slowly whisk in melted butter and chocolate to egg mixture.			
Spray 9 inch cake pan with lots of pan spray and line with parchment paper. 			
Place cake pan on a parchment lined sheet pan and bake 1 1/2 hours			
Test with toothpick, should come out clean.			
Cool completely before removing from cake pans.
Use Old Schoolhouse Brewery‘s Imperial Stout to make it even better!

The Cove is a place where locals can find food at no cost.

Nestled in the downtown strip of Twisp, WA is a bright little ray of sunshine during these dark times. The Cove is our food bank. With so many businesses laying off workers and the back log of unemployment, many more families are relying on The Cove than ever before.

Thankfully, restaurants saw the massive need for more resources and made significant and generous contributions to The Cove. It’s certainly tough times for restaurants, as well, giving further meaning to their generosity. Some researchers are saying that around 40% of restaurants will never open again, so the sacrifice being made by our local restaurants is more heroic than ever. These business owners are opening their hearts and wallets because that’s what we do here in the Methow Valley. We are care about each other and we’re all in this together.
